Stone milling preserves the germ and bran fraction most roller mills discard. The result is flour with measurable nutritional density — not just texture.

STEP 01

Hand Harvest

Cut at ≤14% moisture

Each variety cut by hand using traditional sickles. No combine harvesting — preserves hull integrity and minimises grain damage.

STEP 02

Sun Dry

48–72 hrs · 95°F ambient

Spread on raised mesh tables in the desert air. The low humidity of 4,800ft elevation does what kilns cannot — slow and even.

STEP 03

Stone Mill

Granite · 180rpm · Cold

Single-pass milling on 500mm French burr granite stones. Run cold to preserve heat-sensitive oils and germ. Particle size 150–300 microns.

STEP 04

Pack & Ship

Kraft bag · 1kg / 5kg

Nitrogen-flushed kraft bags heat-sealed within 6 hours of milling. Ships Monday–Wednesday. Arrives at your door in 2–4 days.
